Teen Apprenticeship: Wood-Fired Baking

All meals covered and all materials included in price. If you want to do a work-trade instead of paying full price, simply use the WORKTRADE discount code and receive 80% off the price. You will be expected to work 6 hours for Backyard Bread, date TBD.

Boiling and baking bagels, pizza for lunch, three types of bread, roast veggies, drying herbs…..all of this done in two wood-fired ovens that fired side by side. You will learn to fire the oven, make the dough, and bake the bread as the heat of the ovens recede over time. Throughout the day, as dough rises or bread bakes, we will have mini-lessons on reading dough formulas and planning menus for the oven, and we will do individual consults to plan how each apprentice will champion their own community oven.

Every month, more ovens are built and revitalized in Western MA and Upstate New York, and we need bakers that can champion the ovens in their community. Sam, founder of Backyard Bread, built his first clay oven when he was 16 and began selling bread from that oven the following year. We want to train the next generation of teens who will learn the craft of wood-fired baking, gather their community around their craft, and learn the business and organizing skills needed to establish a community oven.
